Where I am many Thai ingredients aren’t available and I absolutely love Thai food. Thinking about growing Thai Basil and a Curry Plant and maybe lemongrass. I buy frozen peeled ginger and galangal from a local Asian shop so I can thaw out what I need. So far so good.
Reducing the coconut milk first makes sense because you keep more of the curry paste aromas.

Vindaloo curry (from India) is acidic (from tamarind) and uses pork or chicken. I know it not Thai cooking but it is very flavourful.
This is what I needed to level up my curry. I treat curry too lightly - compared to other Thai dishes - thinking it's almost brainless to make but clearly there are steps I'm not doing and conditions I'm not taking into consideration to maximize the end result. Looks like I'm making curry this weekend.

I've lived in Slavic countries my whole life, so Thai cuisine and culture are quite exotic for us, but thanks to your videos (especially this one (I really loved how you showed the cooking process as a technique, so it is possible to combine different ingredients and create a variety of dishes)) I learned how to make Thai curry and discovered how incredibly delicious it is. Thai cuisine is now my favorite.
