In this video, I took matters into my own hands because I’d been throwing my over-ripe plantains into the trash. Little did I know I could actually make this delicacy by myself. All I needed to do was phone my mother-in-law for her special recipe. Ofam is a traditional Ghanaian baked delicacy made from mashed over-ripe plantains and a blended mixture of ginger, onions and peppers for a flavourful, spicy kick. Flour (all-purpose, roasted corn or tom brown) is also added to act as a binding agent. Red palm oil is mixed into the batter and used to grease the baking pan, giving the cake its distinct vibrant orange color and rich aroma. Each ingredient offers a delicious balance of sweetness and heat. Ofam is typically served with roasted peanuts.
