Regarding the xantham gum mess-up. The first time I ever made tapioca pudding (as a kid), I made a mistake with similarly solid results. The recipe on the box called for "2-3/4c milk", meaning "two and 3/4 cups of milk." But without even questioning my own logic, I interpreted it as "between 1/2c (2/4c) and 3/4c milk. Whatever feels right." I did not realize this made no sense until I was staring at... well, basically a single giant glob of boba, LOL.

The "Did you know" thing started innocently, at first it was more to help with small things in the kitchen, like "did you know that if you don't have sugar you can use a sweetener and the results are still almost the same?" (this example doesn't make any sense sorry I couldn't think of a phrase that made culinary sense) but then it started evolving to the point of people giving entire recipes with the "did you know" structure and tht really does miss the point

in the game mouthwashing, you make a really shitty cake out of water, sweetener, and gelatin, and i feel like the raspberry cheesecake xanthan gum monstrosity could fight the horrible mouthwashing cake and probably win.
xanthan gum saved food for me as a coeliac but i've never considered what would happen if more than like a gram was added, i was dying at that part
I have a Ninja Creamy machine and it works great imo! Other than being loud as hell lmaoo. Also idk why Drew’s recipe required mixing it before it was frozen, as the instructions that come with the machine say to make an ice cream base, freeze it, and then mix it. All the machine itself does is turn the frozen solid ice cream base into ice cream. With any frozen desert, I feel like there’s the unavoidable thing that you have to give it time to freeze—unless you have like, a thousand dollar soft serve machine. All of Ninja’s products are kinda pricy though, so I’d recommend buying it on sale.
If someone says, "Did you know...." it better be followed by the most earth-shattering fun fact of all time. Otherwise, it's a waste of the "did you know?" phrase.

The funniest thing about the xanthan gum disaster to me is that the sweetener is clearly the ONLY other bagged ingredient on the counter so all I can picture is Drew putting in the xanthan gum, setting down the bag, and then immediately picking it up again without noticing. Like the end of The House of Usher.
