I’m thinking of switching to a vegan diet and as someone who is active as well, how do you manage your iron? Plant based iron isn’t as readily absorbed by the body as animal sources. I ate a lot of tofu as well but found that it contains calcium that inhibits iron absorption. As an endurance athlete, you must eat a good volume of food so I was wondering how you make sure you have enough iron from food? Do you take supplements as well?
