Black Bean & Pepper Soup Serves: 2 Easy, quick, incredibly flavourful, and super filling! This black bean and pepper soup blew me away. I'm 100% making this again when peppers aren't as expensive as they have been!! Ingredients: 1 small red onion 2 bell peppers (any colour) 1 red chilli (sub 1/4 tsp cayenne & 1/2 tsp chilli flakes) 2 stalks celery 3 cloves garlic 1 tsp coriander, cumin 1 tbsp paprika 1/2 tsp cayenne pepper 1 tbsp tomato paste 540ml cans black beans, liquid included 2 cups (500ml) veggie stock cornstarch slurry (optional) salt, pepper - to taste oil To Serve: bread sour cream, yogurt, coconut cream (optional) lime, avocado (optional) cilantro (optional) Method: 1. Dice onion, peppers, chilli, and celery. Mince garlic. 2. In a pan over medium, saute onion, peppers, and celery with a pinch of salt for 10 mins. 3. Add in garlic, chilli, and spices until fragrant. 4. Stir in tomato paste until slightly deepend in colour. 5. Pour in beans (alongside juice) and stock. Simmer for 10 mins to thicken. 6. Transfer half to a blender and blend until smooth. Pour back in and adjust seasoning to taste. 7.
