Houston has a MASSIVE asian community. Largest Vietnamese population in the U.S. and 9th largest Chinese community in any U.S. metro. Viet-Cajun is a big thing melding the two cuisines so I’m not at all surprised someone decided to give Nigerian food an Asian spin.

You should make pierogi! Potato and cheese filling served with caramelized onions, kielbasa and sour cream for dinner, then a fruit filling for dessert could be a fun idea.

You should make dnich wat. It is a potato stew eaten in Ethiopia over injera. It can be not spicy/alicha(literally weak) or spicy. It’s very delicious and it is one of my favorites. Plus it is very very filling.

2nd video of asking this: Idk if you could make this pickle cus its very season specific(summer) but its.. a type of mango pickle called maavadu. Its super tasty with curd rice.... curd rice is just curd + rice + a little pinch of salt (optional )

when making freid rice you shoulnt add an amount of liquid that wont evaporate since it will clump and make your rice soggy
