I’m not African so I could be wrong on this, but the jollof I have had is a much darker fiery red color, and I think it’s typical to use tomato paste in addition to fresh tomatoes to get a more concentrated flavor.
ECUADORIAN GUATITA!!! The smell of guatita simmering on the stove is one of my most vivid memories from childhood. The colour is great, It's a bit wet looking, you shouldn't add too much water or for the last 5 minutes, turn the heat in high and let it burn (so the water can evaporate faster and there would be a slight smokey flavour).
Actually, this is full of inaccuracies. 'Jollof' refers to the Jolof Empire (pre-colonial senegambia). it is home to the Wolof people of Senegal. Our national dish is called Ceebu jën. The Jollof rice found in Nigeria or Ghana is a simplified version of the true dish. Senegal actually has more than 20 varieties of these one-pot rice dishes, and while Ceebu jën is our pride and joy today, it’s a modern staple rather than an ancient one. Next time, please try to find local sources.
