I was born in Southern California. Off and on, I spent many years living and working in the SouthWest. I learned to love "Mexican" food at an early age, and now, at 84 it's still my favorite Ethnic cooking! From "Jalisco" to "Tex-Mex" I love it all! As kids, our biggest treat was when my Grandpa would treat us to all the Tacos we could eat. At about 7, I once ate 8 full size Corn Tortilla Tacos. The kind where the juice ran down your arm!

My experience with birria tacos is quite different. It’s something I ate three to five times a week or more. I’m glad to see another version. I love learning and exploring new ways to enjoy delicious food. In fact, one of the best things I’ve ever eaten was a birria taco made from ten hour smoked jackfruit and ten hour smoked nopales. Thanks for sharing you adventures!
