Now days I have to hit a lotto to buy a steak.
Flipping after each cross hatch sear (total 3 flips) will help with that band around the edge. Too much direct heat on each side for too long.
Wow forget the rib steaks look at those Charcoals they are perfect..! This man knows what he's doing!!!
I've NEVER had a steak be properly cooked to 120-125 with only 6 minutes on the grill on direct heat. Same with a cast iron pan indoors. It's ALWAYS going to some indirect heat to finish the internal temp.
I wish I could afford beef still. Oh well, going to go eat my dinner now. I think we're having tuna casserole again tonight. Left over from the same dinner last night.
Man I’m hungry for one of those. Lol Used to buy steaks at a butcher in shingle springs California. Little hole in the wall. Arab guy. His brother raised the beef he sold. I’ve never been able to get steaks that good anywhere in the west coast. Lol I was a t bone porterhouse guy back then. But I got ribeye a few times too. Never needed a knife on that meat.

Also let them warm up a bit from the fridge… ice cold steak on a hot grill is a recipe for raw in the middle and burned on the outside
