I bought a smoker like 5 years ago. Since then i havet touched bbq sauce. Mustard or hot sauce and then your spice rub. Cook till you like the bark amd wrap with pats of butter brown sugar and hot or reg honey. Pull at 202 ish or lile 210 if you want fall apart. Smoke at 220 the entire time. Your lookin at a solid 5 or 6 hours and buy burcher paper
Any acid such as the vinegar and bbq sauce will react with the aluminum foil and it will leach into the food. Better to just put in a stainless steel pan or any pan with a lid., cover with foil so it doesn’t touch the top.

The sweetness of the brown sugar and the apple cider is good for brine and marinade. But then you add foil to that.! Cooking things in foil is in good it affects the taste metallic but people are used to that. So recognize the difference foil cooking is not only bad for you and it does affect the flavor. But it's an all too common mistake
How long do you smoke them? And how long do do cook them after you wrap them. They look great.

I boil my ribs in vinegar apple juice mix to make it tender then we put in fridge
Is there any ribs recipes that don't include BBq? Bbq is really sweet for me.
