Discover the authentic food culture of the Basque Country in this episode of At Our Neighbour’s Table. In Xiberoa, one of the oldest Basque regions, farmers Bettan Pribat and Bastien Garat raise rare Kintoa pigs, an ancient breed that lives freely in the wild, just like their sheep and cattle. Their sustainable farming methods produce high-quality ham, sausages, and traditional preserved meats sold locally. Meanwhile, high in the mountains, shepherd Elorri Aizager spends the summer on alpine pastures with her sheep and goats, crafting traditional Basque cheese using time-honored techniques. Together, they bring these ingredients to life in a variety of local dishes, including vegetable tart, piperade with egg and bacon, marinated goat, black pudding crumble, and a rich sheep’s milk cheesecake. I watched a Chinese YT about pork and sausages a few days ago and heard the pigs screaming as they were slaughtered. It rocked me, especially as I had cooked two delicious pork belly meals 😢 I understand the reality and the transaction between sacrifice and consumption and evolution of the human species. The Chinese family did nothing different from these lovely young Basque farmers. They respected their pigs and used all their parts. I suppose seeing this slower paced video has helped plus the assertion that we need to consume less but of better quality and cherish it.
What was funny about the pig joke?
Beautiful video, thanks for sharing. Basque Country is not very well known, which is a pity. We live on the Spanish side, and we also observe how the young generation of Basques respect and celebrate their traditions. We experience here very different life than in America.
Thank you so much for your video! Superb! and greetings from Houston TX! 🎉
just beautiful
16:08 Is catzo the cow’s name? She’d be bullied if she went to Italy.😅
