Awesome recipe! For old folks or anyone with insulin resistance, drop the potatoes. (If you insist on potatoes, then cook them, refrigerate for 24 hours, and add them at the end. Refrigerated potatoes create resistant starch, reducing the overall "net carbs".) By the way, the sauce was not in the description. If the sauce contains mayo, sub with sour cream, yogurt or avocado mayo.
