physicist here, answering this because i think both josh and hank will find it interesting: in terms of how microwaves heat food. water molecules are polar, meaning one side of the molecule is more positively charged and one side is more negatively charged. when the microwaves travel through the food, not only are they a form of light, as these photons propagate they also generate a corresponding magnetic field. the positive and negative poles of the water molecules rotate to align themselves with this electromagnetic field exactly like how a magnet will align itself with a nearby field. and as the electromagnetic field oscillates very fast, this causes the water molecules to spin very fast to align with the alternating field. think of the water in the food as a bunch of really tiny magnets constantly flipping orientation. this rotation causes the water molecules to bump into other molecules in the food, which causes friction, and in the process this generates heat as a byproduct, which has a net effect of warming the food.
