I go by senses when it comes to quality assurance to see if something I have is still edible Sight: Is there mold? Smell: do it reek in a different kinda way? Touch: is it the incorrect texture? Taste: SMALL taste to assess if it's still good. I will also usually throwout stuff if it's about a month after its best by date (not counted for canned goods just refrigerated and sometimes freezer goods depending)

i never worry about dates because i store very little perishables and eat what i buy "fresh" pretty quickly. everything that isnt a bean or a can goes into the freezer immediately.

hot take, if you eat it fast enough you could probably not refrigerate it. depends on the food of course, some are gonna be fine for a couple weeks (some cheeses ime), some for a couple days. also make sure your hands and utensils are reasonably clean and you touch it as little as possible. the bit on the label about refrigerate after opening might be because if you do it might last for months or years.
