How Does Pickling Work? | Serving Up Science

Food

Pickling! It's that salty, briny process that makes foods taste so strangely good. The pickle garnishes our favorite foods, from burgers & hotdogs to turkey sandwiches. But it’s not only an American classic -- it has roots dating back hundreds of years and has traveled the world. #pickles #pickling #foodscience #food #servingupscience #cooking #history #historyfacts "Serving Up Science" is a production of ‪@wkar for PBS Digital Studios, which is solely responsible for its content. Too many jokes that are just random, and not actually funny. Just give us more information and cut the jokes. Except for the one joke about them being in a pickle. That was good.

There was a surprisingly small amount of science presented in this video for a series called, Serving Up Science...

I am doing my fall pickling and preserving, starting with sweet pickles, then on to watermelon pickles, beet ketchup (I dislike tomatoes), red pepper relish, and sauerkraut. I might do some pickled onions too.

I’m a super picky eater — I’ve always hated pickled cucumbers, but for some reason I love pickled carrots and daikon (really tasty on banh mi or bibimbap). Love kimchi, can’t stand sauerkraut. The tastes are just better!
