No-rest mini pizzas in a frying pan. 🍕 Ingredients: 250 g all-purpose flour (2 cups) 130 g water (1/2 cup + 1 tbsp) 7 g instant yeast (2+1/4 tsp) 1/2 tsp salt 15 ml olive oil (1 tbsp) Instructions: 1. In a large bowl, combine the flour, instant yeast, and salt. Add the water and olive oil, then mix until a dough forms. 2. Transfer the dough to a lightly floured surface and knead for about 2–3 minutes until smooth. 3. Divide the dough into 8 smaller portions if making multiple pizzas. Roll or press each portion into a thin circle. 4. Heat a non-stick skillet over medium heat and lightly grease with a bit of olive oil. 5. Place a rolled-out dough portion into the hot pan. With the lid on, cook for 1 minute and then flip and cook the other side for another 1–2 minutes. 6. Lower the heat, spread sauce, cheese, and toppings over the cooked side, cover the pan, and cook for another 3 minutes or until the cheese melts. 7. Remove from the pan, slice, and enjoy immediately. 🏷️ #easyrecipes #quickrecipes #pizza #italianfood

Or you can try this-2.5 cups all-purpose or bread flour 1 packet (2 1/4 tsp) active dry or instant yeast 1 tsp sugar 1 tsp salt 1 cup warm water (around 105-110°F/40-43°C) 2 tbsp olive oil (plus extra for the bowl) For the Sauce: 1 can (14 oz / 400g) crushed or diced tomatoes 1 tbsp olive oil 1 clove garlic, minced (optional) 1 tsp dried oregano or mixed herbs Salt and pepper to taste For Assembly: ~2 cups shredded mozzarella cheese Your choice of toppings (e.g., pepperoni, sliced bell peppers, onions, mushrooms, olives) Optional: fresh basil leaves, a drizzle of olive oil for finishing Instructions 1. Make the Dough Activate Yeast: In a large bowl, dissolve the sugar and yeast in the warm water. Let it sit for 5-10 minutes until it looks foamy and creamy. Combine Ingredients: Add the olive oil, flour, and salt to the yeast mixture. Mix until a shaggy dough forms. Knead: Turn the dough out onto a lightly floured surface and knead for about 5-10 minutes, or until it is smooth and elastic. Rise: Place the dough ball in a lightly oiled bowl and turn it to coat. Cover the bowl with plastic wrap or a clean towel and let it rise in a warm, draft-free place for about 1-2 hours, or until it has doubled in size. 2. Prepare the Sauce While the dough is rising, heat 1 tbsp of olive oil in a small saucepan over medium heat. Sauté the minced garlic for about a minute until fragrant. Add the crushed tomatoes, oregano, salt, and pepper. Bring the sauce to a low boil, then reduce the heat and simmer for 15-30 minutes, or until it has thickened enough to spread without running off the edges. 3. Assemble and Bake the Pizza Preheat Oven: Place a baking stone or an inverted baking sheet in the oven and preheat to the highest possible temperature (ideally 475-500°F or 240-260°C). Let it preheat for at least 30 minutes to an hour. Shape Dough: Once the dough has risen, punch it down gently and divide it into two equal portions. On a lightly floured or cornmeal-dusted surface, use your hands or a rolling pin to stretch and shape each portion into a 10-12 inch circle. Add Toppings: Spread a thin layer of sauce evenly over the base, leaving a small border for the crust. Sprinkle with a generous amount of cheese, then add your desired toppings. Bake: Carefully transfer the pizza to the preheated stone or baking sheet. Bake for about 10-15 minutes, or until the crust is golden brown and the cheese is melted and bubbly. Finish: Remove the pizza from the oven, let it cool for a minute, slice into wedges, and serve immediately. You can finish with fresh basil leaves and a drizzle of olive oil if desired.

If you don’t have yeast you can use yogurt and flour and you only have to rest it for 2-3 mins
