For anyone who wants to rag on Steve: Before my "adopted dad" retired, he was a master chef running the Hyde Park Barracks. Very good chef, fed some very distinguished people. Even he would cheat with spice packets or pre-made sauces at home* (korma, tika masala, etc). No one wants to bust their @$s in a commercial kitchen for 12+ hours and go home to do the same.
Love this. As a busy father of four and my wife and I work full time these are great.

love it- home cook here, and it's amazing how many disclaimers you have to give because the culinary world is so gunned on being unrelatable that they are willing to throw a fit over any shortcuts or compromise in steps/ingredients. awesome recipe 10/10

As a poor student in Montreal way back in the day (90s) this recipe would have been invaluable. I was constantly thwarted by basic recipes that required a bunch of stuff I didnβt have. Fast forward 30 years and my pantry is stuffed with spices and other dried goods from my earlier anxious experiences. This is a great post!

Big bowl full of macaroni, big handful of grated cheddar cheese, then pour this hot chili right on top. That'd be killer.
The fact that he is accommodating people who don't understand shows either how far he has come or how willing he is to maintain. Either way, hope he continues to do well.
It's amazing how many regional differences there are with chili. As a Texan, I took my honeymoon to New Hampshire. I was young and naive. I ordered chili and what I got was vegetable soup with ground beef. Soooo different.
