All these chefs saying that they've never seen anybody do it, I was a chef for 10 years in middle-end restaurants and most restaurants I have worked at did this. If you are a Michelin star chef, you're trying to get perfection and exactness, you're not going to get that from this method. This is a quick and fast way to cut a lot of tomatoes quickly.
