Season the chicken with salt, black pepper and garlic powder, mixing well to coat evenly. Heat a large pan over medium-high heat with oil and cook the chicken for 3–4 minutes, stirring occasionally, until lightly browned and excess moisture has cooked off. Do not fully cook it. Remove from the pan and set aside, discarding any excess liquid. Thinly slice the potatoes and place them into a bowl with salt, tossing to coat evenly. In a separate bowl, combine the thickened cream, cream cheese, grated garlic, black pepper and paprika, mixing until smooth. Layer half the potatoes in a large baking dish, then half the chicken. Spoon over half of the cream mixture and spread it evenly so everything is coated. Repeat with the remaining potatoes and chicken, then finish with the remaining cream mixture to ensure full coverage. Cover tightly with foil and bake for 30 minutes. Remove the foil, sprinkle over the mozzarella and parmesan, then return to the oven uncovered for 15 minutes until golden, bubbling and slightly crisp on top. Remove from the oven and let it rest for 10–15 minutes to firm up before portioning. You know what is great in scallop potatoes is bacon, we also add parmesan cheese to the cream, extra flavour, great recipe Chef Jack, absolutely one of my favourite meals, and you definitely hit it out of the ball park today

I cook this almost every other week, and I also add layers of bell pepper and carrots, which are also a bit fried to remove extra moisture. Super tasty and healthy.
