Layers of tender chicken, soft potatoes and a rich creamy sauce come together into something that reheats well and keeps its structure all week. 👇 LINKS & TOOLS I USE DAILY Koi Knives — The knives featured in all my videos https://www.koiknives.com/discount/JackOvens Luvele Vacuum Meal Prep Containers — What I use to store my meal prep https://www.luvele.com/?ref=qNAC7JWq6gdhha My Amazon Storefront (All Tools & Equipment): https://www.amazon.com/shop/chefjackovens 👇 RECIPE (Full Written Version) Serves: 5 | Prep Time: 25 mins | Cook Time: 45 mins | Total Time: 1 hour 10 mins Chicken 900g (2lb) - Boneless Skinless Chicken Thighs, Cut into Large Bite-Sized Pieces 1 tsp (2g) - Garlic Powder 1 tsp (5ml) - Olive Oil Salt & Pepper Potatoes 1kg (2.2lb) - Potatoes, Thinly Sliced (2–3mm) Salt & Pepper Cream Sauce 300ml (1 ¼ cups) - Thickened Cream 150g (½ cup) - Light Cream Cheese 3 - Garlic Cloves, Finely Grated ½ tsp (1g) - Smoked Paprika Salt & Pepper Cheese Topping 120g (1 ¼ cups) - Mozzarella, Shredded 40g (½ cup) - Parmesan, Finely Grated To Serve Flat Leaf Parsley, Finely Chopped Method Preheat oven to 200°C / 400°F fan-forced. Season the chicken with salt, black pepper and garlic powder, mixing well to coat evenly. Heat a large pan over medium-high heat with oil and cook the chicken for 3–4 minutes, stirring occasionally, until lightly browned and excess moisture has cooked off. Do not fully cook it. Remove from the pan and set aside, discarding any excess liquid. Thinly slice the potatoes and place them into a bowl with salt, tossing to coat evenly. In a separate bowl, combine the thickened cream, cream cheese, grated garlic, black pepper and paprika, mixing until smooth. Layer half the potatoes in a large baking dish, then half the chicken. Spoon over half of the cream mixture and spread it evenly so everything is coated. Repeat with the remaining potatoes and chicken, then finish with the remaining cream mixture to ensure full coverage. Cover tightly with foil and bake for 30 minutes. Remove the foil, sprinkle over the mozzarella and parmesan, then return to the oven uncovered for 15 minutes until golden, bubbling and slightly crisp on top. Remove from the oven and let it rest for 10–15 minutes to firm up before portioning.
