You can get the creamy texture without the fresh cream by adding a tea spoon of corn starch diluted in a little water or any kind of milk 3 spoons ( gluten free+ lactose free)

Just a suggestion: crack each egg separately into a small bowl, then transfer to larger mixing bowl. That way, if there’s a bad egg, it won’t ruin the rest of the eggs.

For anyone who prefers egg circles on English muffin breakfast sandwiches, just plan to make some breakfast burritos the same day and use all the egg scraps from cutting circles in the burritos.

This is soo smart. Sometimes I’m in such a rush in the morning that the only realistic thing is to microwave, so having pre-cooked egg cubes sounds great.

The milk is essential to making it fluffy to anyone vegan… I’m slightly lactose intolerant and it’s not a step to skip. (Intolerance isn’t an allergy, I lack the enzymes needed to break down reg milk but fermenting or cooking it helps me tolerate it.) I can do sour cream and butter though as a sub. Some type of liquid fat is needed or it’s an icy, spongy block.
