The similar taste profile of the chinese noodle dish and the Grünkohl mit Pinkel is probably due to the fact that the chinese leefy green comes from mustard leaves and the german from cale and they are both related and come from the same plant family (related also to broccoli, cabagge, cauliflower). :)

I’ve lived in Hangzhou for many years and I’m really fond of Hang‑style cuisine. It is light‑tasting, low‑in‑oil, true to the natural flavours of ingredients and healthy. There is great variety both in raw materials and cooking techniques. Dishes include Dongpo Pork, Sister‑in‑Song’s Fish Soup, West Lake Water Shield Soup, Sautéed Lotus Seeds and Water Caltrops, Steamed Pork with Preserved Mustard Greens, Hangzhou Mixed Seafood Hotchpotch, Beggar’s Chicken, Hangzhou‑style Salted Duck, Braised Spring Bamboo Shoots in Soy Sauce, Drunken Shrimp, Qiandao Lake Fish‑head and Tofu Soup, Longjing Tea‑flavoured Shrimp, Steamed River Perch, Qiantang Mullet, Hangzhou‑style Drunken Crab, Stir‑fried Crispy Prawns, Cuttlefish Stir‑fried with Pickled Mustard Greens, Steamed Swimming Crabs in Wine Lees, and Crucian Carp Soup with Clams, to name but a few. Which of these is not exquisite, tasty and wholesome? It is nothing like the heavy‑flavoured food of Sichuan, which features excessive oil, salt and chilli.
The lotus seed is only bitter because of that tiny little sprout inside isn't removed. You gotta break the seeds in half, and remove before snacking on it.

Counter argument: because there's not a local authentic food culture like in Sichuan, Dongbei, or in Kunming, you can find plenty of niche regional foods here quite easily. Try getting clay pot chicken in Chengdu. It's similar to the wine argument in London. The best *variety* of European wines are found in London, not in Italy or France.
