Laura you have to remember that not only is the tomatoes low acid but the onions are as well so 2 cups of vinegar is necessary to achieve the right acid amount, especially if you arent adding ascorbic acid to each jar.

I’ve followed you for years, so this completely made my day. I’m SO glad you tried the recipe and enjoyed it! ❤️ And YES, you really do have to trust the process with all that vinegar. 😂 Also, if you make it again, you have to try adding some bell peppers to the pepper mix!
