I do like artisans using their hands…hands have healing properties..the people who works with their bare hands are full with joy that transfers to their creations. Depending on the environment and the phase..

The proud dutch lady making Gouda is the exact kinda people I imagine would make great cheese. Fortunately these people keep these beautiful traditions with their hard work in times when it must be extremly difficult to compete with industrial cheese.

I did not realize this video was boutta be 3 hours long, but I'm just starting and my first thought is I'm happy yall gave every cheese it's own time instead of cutting down a bunch of content to make it short

I love the fact they went to Wisconsin for cheese curds. We really do have the best (also not all of our curds are yellow, those are specific cheddar curds and while i love cheddar i dont like cheddar curds, but outside of that, yes ur curds should squeak and feel like its cleaning your teeth). Also alot of people say culvers curds are the best deep fried curds, they arent (culvers is good, but eh), go to a local pub here (just a random hole in the wall, all of them sell curds lol), ask for an order of curds and a spotted cow (i dont even like beer, but spotted cow is pretty good, otherwise we do have an ass load of other local beers and imports from Germany, just ask for something thats full body they will hook u up). And yes i can say we have the best in the usa ive traveled several states and bought curds often on the road and just ended up throwing the entire bag away either cuz the cheese is the wrong texture (often slimey or to soft), or the taste is similar to kraft singles (which is technically cheese, its just a melted and shaped Frankenstein of like 6+ different cheeses, so no its not plastic or fake cheese, its just gross tasting) Fun fact Wisconsin and Germany are the only 2 places in the world to make limburger cheese (which is a great melter cheese for burgers, grilled cheeses, or any of ur melty cheese needs, if u can get passed the smell lol). It is absolutely delicious though and i highly recommend trying it at least once. If u need to store it, have a way to triple seal it or a separate fridge area (like a garage fridge), its smells like a preteen locker room filled with crusty socks (i have older brothers, yes that description is accurate based on experience)
