One of the reasons, not the only reason, that Mexican cuisine in the United States is different from Mexico City is that very few permanent residents of Mexico City ever immigrated to the United States - most people of Mexican ancestry in the USA came from rural regions like Michoacan or Zacatecas with different foodways and Mexico City is a sophisticated and ancient world capital. That doesn't mean the food of the regions and rural areas isn't delicious, it's just more rustic in the same way that food in Paris is quite different from Poitou or Brittany.

I loved that you tried the experience of making salsas. The bread at Rossetta bakery is okay, but it's overrated because so many tourists go there and it's only famous. But try bread at other places next time and you'll be surprised. That's why the Cardenal's concha tasted so delicious. PD: Thanks for visiting my city.
