LA is the best food city in the United States of America. Inside LA’s underground food scene is a thriving pop-up culture. In 2023, LA saw more than 65 major restaurant closures. In 2024 and 2025, that number rose to over 100 in both years. What’s become clear is that the traditional brick-and-mortar model is no longer sustainable or accessible for so many of our younger chefs. Which is why the pop-up scene is where some of the most exciting, experimental, and innovative work is happening in the food space right now. After the pandemic, we saw explosive growth in the number of pop-ups in LA’s underground food scene. Chefs can push the envelope without the pressures of overhead, and can play around with food that expresses their full identities. “The Pop-Up Life: Los Angeles” follows local chefs, from the Chicano soul of A’s BBQ to the grilled lobsters of Lobsterdamus, as they navigate the ups and downs of operating a food pop-up. I really enjoyed it and savored all the nuances of L.A. my native home. Well shot and edited, with a great selection of music that was the complimentary spice. The only mistake I made was watching it on an empty stomach! Now me and my growling stomach would like to see more!

The impact of Smorgasburg and food trucks on the LA food scene cannot be understated. I think they also loosened up some laws around street food in like 2022 and the street scene has really exploded here since. Social media + innovation + perfect weather + cultural variety are what make LA so innovative.
