Does fusion food really exist?

Food

London’s newest Italian restaurant looks more like a toy box than a trattoria. At Motorino, Stevie Parle has built a space that glows in Lego colours and flirts with the idea of a London-Italian cuisine. The result is part nostalgia, part experiment, and entirely its own creation. On my Substack, I explore what that phrase could mean. Is there really such a thing as London-Italian cooking, or are we simply watching a generation of chefs unlearn the rules of authenticity? I trace the mood through playful interiors, sausage-laced gin pasta, and a tartare that hides under a pile of fries like a child under the duvet. You can read the full review now on Substack – by tapping the link in my Instagram bio. "If you added ham this would have been a British carbonara...If my grandmother had wheels, she would have been a bike" is what I heard when you said London-Italian
