I've been lucky to have lived and worked in quite a few countries and I'm adventurous when it comes to food and there are a lot of cuisines I enjoy and have regularly. When I first had Thai food, it was an absolute revelation and I have cooked it often now at home for many years, but a special mention goes to beef rendang which I think is absolutely epic and a serious contender for one of the best dishes in the world. It is that good.
Indonesian cuisine is still so underrated. So many of Indonesian dishes are so good they become staple in other countries like Malaysia, Singapore and even in the Netherlands.
