Bangin’ Bison Chili Servings: 8 Calories: 445 Protein: 46g Carbs: 28g Fat: 14g Ingredients • 2.5 lbs ground bison • 1 large yellow onion, diced • 1 red bell pepper, diced • 1 green bell pepper, diced • 1 jalapeño, diced • 5 cloves garlic, minced • 2 (15 oz) cans crushed tomatoes • 1 (6 oz) can tomato paste • 2 (15 oz) cans black beans, drained and rinsed • 1 cup beef broth • 1 tbsp Worcestershire sauce • 1 tsp liquid smoke • 2 chipotle peppers in adobo sauce, minced • 1 tbsp unsweetened cocoa powder • 1 tsp instant coffee dissolved in 1 tbsp hot water • 2 tbsp chili powder • 1 tbsp smoked paprika • 2 tsp cumin • 1 tsp oregano • 1 tsp salt • 1 tsp black pepper • ½ tsp cayenne pepper • 1.5 cups nonfat Greek yogurt • juice of 1 lime Cook HIGH for 3–4 hours or LOW for 6–7 hours. Stir in Greek yogurt and lime juice at the end. Store refrigerated for up to 5 days before freezing. Add approximately ¼ cup water before reheating.
