Question - when cooking chickpeas, how do you prevent that outer skin from detaching. I never have this problem with any other Bean which is why I buy my chickpeas from a can?

Love seeing how other people cook beans! I’ve found that soaking the beans in water with one tablespoon of apple cider vinegar helps a lot! And some people who have low fiber diets might be experiencing a fiber bomb so if you’re trying to eat more beans, ease into it ❤🫘

Started soaking my beans in salt & baking soda last year thanks to another video from Nisha & I'm incorporating way more beans in my cooking! Slow cook with cumin and a few bay leaves is amazing for the broth.
My husband has ARFID (disorder that makes eating difficult, he can’t have many foods) and he LOVED this recipe. He said it was the best thing I’ve ever made. I didn’t know how you could make a pot of beans luxurious but boy did you. Will be adding to the weekly rotation for sure.

I grew with a pot of beans always on the stove. I used to love eating frijoles de olla, freshly cooked beans in their broth. If I wanted to take the trouble I’d heat up a corn tortilla on the comal, roll it up and dip it in the bean broth as I savored the beans. Quick simple and so nutritious. We were poor but well nourished.

I have been cooking beans for about 50 years and then about 35 years ago I did a workshop on cooking beans and vegetarian cooking and that's where I learnt to use Kombu in the cooking water. I always pick over, wash and drain then soak the beans for 8 hours or overnight then drain and rinse them again. I sometimes sprout the beans before cooking them. I was never taught to use salt to soak or cook the beans as it was thought to toughen them, so it is different for me to see you do this. I guess because I always use Kombu when cooking beans, I don't think to use salt until I add vegetable broth as that has salt in it. I always scoop off the froth as the beans are cooking as I was taught that it helps digestion to remove this, not sure if this is true or just what people used to think. Then I cook onions and garlic and add the cooked beans and any vegetables or I add the onions, garlic and vegetables to the beans. It was interesting to see what you do.
