If you like Parmigiano Reggiano or a similarly hard cheese, I would recommend using that rather than a softer cheese like cheddar. Much less water to have to cook out. Additionally, I don't think I caught what temperature you were baking these at, but you could start at 325 until the crackers are getting close to the color you want, and then bring it down to something like 225 or 250 so they can kind of dehydrate slowly.

They might not dry out and crisp up until they are completely cooled because of the cheese. Typically cheese crisps don't actually harden until cooled
