I just made this. Next time I will not add the water to the onions. Instead, will just add all the roasted veggies and tofu to the onion, and serve over rice. The broth was surprisingly tasteless, and I felt it was unnecessary. Really enjoyed the veggies.

The tofu looks like "super firm" not just firm. Super firm is vacuum-packed. Also, you would list garlic in terms of "cloves" - so it would read "3 Cloves Garlic".

Worcestershire sauce isn’t vegan either, it’s not even vegetarian - Contains anchovies. You can buy a vegetarian version in some places but please don’t use it in recipes when cooking for vegetarians.
