Because they were used to fighting European barbarians, not men clad from head to toe in armour and seated on armoured cavalry that came hurtling at them again and again. Those are the tactics, after all, that resulted in a young Sassanian Empire capturing a Roman Emperor in battle only a couple of decades after they’d claimed another Roman Emperor in a rout following the defeat of his army.
