Mark, you missed two important regions in china if you are looking for best noodles: One is henan province (河南省） one is shanxi province（山西省）。 They are both very good at wheat flour based foods。

The snowball effect of 20 years of travel videos by Mark and his family into more comprehensive dish categories like just noodles around the world is impressive. So many dishes well known and not so well known around the world and Mark has probably eaten it is staggering, and I've had about half of these dishes myself. One of the hardest working YouTube creators out there, for sure.
I've been eating noodles with butter and parmesan cheese for years. I like it so much more than the fettuccine you get in here. But I still would love to try the original.
