Oh my goodness. The first recipie is like ghe one my mom made in the 50s-60s. But, she used pork chops. The recipie was lost forever when she passed away in 1969. Now my whole family has passed away and here is the recipie. Thank you so very much!!! I'm going to make it tonight with pork chops!

This is basically how I learned to cook… My mother would sit us at the table and show us how to cut up onions, carrots, and celery, and I remember asking after that, what were we making? spaghetti sauce, chow mein, baked chicken, etc… little did I know that my mother was teaching us how to make a mirepoix as preparation for all of our meals… I don’t know what I’m doing watching Nicole at 4 o’clock in the morning, especially since I’m having a minor surgery tomorrow or actually today and there was no eating anything after midnight… Now I’m starving…

I’m a professional trained chef. Worked in a pasta restaurant for 5 years. I always have par boiled pasta in my fridge. Usually penne. I’m 80% Cajun & make my own Cajun seasoning. The difference between Cajun & Creole seasoning is spice level. Cajun is a tad spicier. It better be Andouille sausage in that “Cajun” pasta.
