I love that no one seems particularly surprised that there’s a westerner speaking to them in fluent mandarin (assuming it’s mandarin since you said you’re in the north)

In Malaysia / Singapore, we have it the South China version which is in dessert style, sweet! We call it tofuhua, soyamilk pudding, or beancurd pudding.

Try dipping the yiew tiau into dark coffee and take a bite. Coffee need to have a bit sugar. That's how I like it.
The rest of Asia just refer the tofu brains as bean curd.

豆腐脑,In Singapore n Malaysia some places we called it 豆花/豆腐花(bean curd).

Those fried bread sticks looked so good! Can’t find them like those in Houston- fat and fluffy. I always pull them apart, then soak in soy milk or doa hwa. Your NE accent is so authentic, reminds me of my grandfather’s and my mother’s accent.
