If I'm not mistaken, there was a single shuttle launch that did NOT invert the stack on the way into orbit. They wanted to see if there was any benefit to using the shuttle's wing lift to augment the ride up. Obviously, it did not.
Moonraker is a massively underrated 007 flick. Definitely my favorite of the Roger Moore era.
I read an interview with someone from the _Moonraker_ production crew which mentioned that they had eagerly watched the first real shuttle launch, comparing if with what they had put into the film. Their primary take-away was: "We didn't use enough smoke."

My favorite is when they show the Shuttle either thrusting perfectly vertical even when it's in space, or show one of the stage separations with blue sky and clouds around it.
The shuttle on top of the tank just looks more... CINEMATIC!!!

Took me two watches to realize what they even meant by inverted. I thought they were saying the nose of the shuttle should be facing downwards during lift off, but it's about how the shuttle should be facing the Earth when it levels off in orbit instead of basically riding the rocket.

Funny you mention Moonraker. They may have got the launches in the movie correct, but they really messed up on the pre-credits scene where they steal a shuttle from the back of a transporting 747 while in flight. In flight being transported where its engine nozzles are covered with the streamline cover and they have no access to any fuel.

For what it's worth, the space shuttle absolutely could launch heads up, and on STS-87, it actually did perform part of the ascent heads-up. The reason for the heads-down posture is two-fold: 1) the vehicle is somewhat more stable when going through Max-Q in this posture and 2) the ET is out of the way for communication with ground stations. But on STS-87, because of the flight path, an extra ground station in Bermuda would have been required to maintain communication during a heads-down ascent. So, they rolled out of that position early, transitioning comms to the overhead TDRSS constellation instead.
