Love all the great detail for the info on the spices. When most people hold their nose closed, it will pretty much hinder their sense of taste (your blueberry seltzer example):)

I make my own spice blends and seasonings, and found this very informative. Brought awareness to my palette and this is exactly what I was doing and finding flavours on my pallet and the way I taste ..thank you !

I cannot understate how much I love your approach! Respecting both traditional methodology, a scientific and curious approach, and application of concepts. Anyone can take out so much from this style of learning, whether its simply knowing the result, or learning about aromamolecules and how the different levels of top middle and bottom flavors affect the whole profile. This approach to cooking is what separates it from being a time consuming chore or forced responsibility, to a fun hobby!

This felt more like a scientific deep dive on spices rather than a beginner's guide on spices like I was looking for. I want to learn how to cook, what spices to use, etc. Good video regardless.

I really loved the video. I especially loved how you took time to explain the aroma concepts and how you did the experiments. I am trying to learn how to taste spices and improve my palette. I am blind and so I am trying to learn how to use my other senses to learn, taste, smell, and texture combinations of what certain spices taste like. Please please please continue to make these videos. I think they are very helpful. I would love to know more about spice flavors smells textures and origins.❤

I’m trying to learn some great Indian cooking, and I really appreciate the ways you validate the old ways and people who ideated all of these yummy techniques. One thing I’d ask (it may be impertinent to the topic on this specific video) is would you recommend which few spices to stock a pantry with in order to delight my Bengali in-laws who are good cooks? All I know so far is mustard seeds and cumin. Thanks 🙏🏻

Very informative! Thanks Ethan; I love all your videos, you are helping me become a better home-bound "chef" in the kitchen. At 72 years and with some physical limitations, I don't get out as much as I used to. It's just me and my wife, so I love to bring the best restaurant-quality cuisine to my dining room table.

Love your videos. You asked for feedback on how to make the videos better, or to keep them shorter, but I actually find them to be just the right level of in-depth, and you speak clearly enough that I can still understand you at 2x speed. So, keep up the good work!
