I'm trying to be more self sufficient in my parents home and this is so helpful and encouraging! I always feel like I'll never be able to move out (I'm disabled) but this gives me hope that I can be both independent and have good quality of life.
My low energy go-to for dinner is a pot of rice and baked salmon with lemon-pepper. It basically makes itself. Then I fry up some broccoli if I have it and I cut the broccoli sitting down. The other is just frying an egg with toast and fresh tomato or boil a packet of noodles and crack an egg in it(I can make in directly in the bowl in the microwave to reduce cleaning). Another useful thing is to hard boil several eggs and have them cold as high protein snacks for when you really don't have time. Bread goes moldy really fast in our house so we freeze ready cut bread and get a slice from the freezer. It thaws quickly on the counter or you can use microwave, toaser or pan to thaw it. Have some cold sauces ready in the fridge. I have often reheated bernaise sauce in the microwave and I have some garlic sauce and bbq sauce at the ready. If you want more fancy food and you really don't have energy to do anything during a work-week etc, the trick is to make it when you do have the energy. A lot of ppl use a slow cooker for this or they mealprep. I started working in a Hotel now and we freeze doughs in bulk, thaw it overnight and then let it rise on the counter for a few hours before baking. Another thing is to boil up several eggs and have them as high protein snacks for when you don't have time.

My mom is Gardena, in L.A. county. Gardena is mostly Asian influenced community, mostly Japanese, but also Korean and Chinese but mostly Japanese. There are many Asian restaurants, a shopping center with a Japanese grocery store, there's a Daiso and a few Asian markets. My mom goes to a Baptist church there for over 18 years and most of the congregation is Japanese-American. They love My mom, a lot of the ladies there bring her their homemade recipes, and she makes them her homemade Mexican food. They always go out to lunch together and some of her friends told her to shop at the Asian grocery stores, a lot of good values and fresher foods and fruits and vegetables you can't find in an regular grocery store. I grew up with a lot of Asian friends in high school and been to their homes many times. Since Facebook started, it helped us to find our old school friends and when I visit mom, we all try to meet up, our own reunion when possible. Also, when I visit my mom, I make sure to go to Daiso near her neighborhood. I bring back two bags full of Daiso merchandise! β€π
I love going to the supermarket, even though I already know what's on each shelf. I simply love looking around, comparing prices, weights, textures, smells, and colors. It's one of my favorite activities, truly.

Freezing bread creates fiber! Its actually one of the best things you can do to increase your fiber intake and protect your gut, as the starches in the bread become resisteant once frozen, and when you reheat and eat it, it significantly reduces the bloating you get

Got sick on Christmas Eve. Had zero energy to do anything for the entire week. Finally cooked today. I made Pastina soup with shredded chicken and veg, and that tiktok feta pasta. Both super easy to cook at the same time and both gave me plenty of leftovers to feed myself, my sister, and my husband. Happy to have my energy back.

Tips: 1. Shop with a grocery list 2. Costco for frozen protein and veggies, as well as breads/rice/pastas 3. Produce (potatos, onions, apples) and sauces from asian grocery stores 4. Low-sodium, canned goods 5. Blocks of cheese, shredded and frozen in 2oz amounts (defrost what you need the night before) 6. Veggies about to go bad? Chop them and roast them!
