I appreciate what you’re doing but I never trim a brisket and that works for me. We always love to way it turns out.

they didn't say but this is a high heat trim. if you are cooking low and slow you dont need to trim so aggressively

I've watched too many brisket videos where they trimmed almost nothing and it came out exactly the same. They would ask why they ever trimmed so much away? Usually for appearance, more than cooking.
