Ciao Gino, I wanted to share a beautiful story with you — one I think you’d appreciate more than anyone. My Uncle George once told me the best pizza he ever tasted in his life was in Italy, somewhere in or near Naples. But it wasn’t just the pizza that stayed with him — it was where it was made. He said the ovens were built right into the mountain, carved into the volcanic rock, almost like natural caves or grottos glowing with fire. The whole place felt ancient, authentic, and alive. He remembered the heat radiating from the stone, the smell of wood and basil drifting through the grotto, and the pizzaiolo sliding pies in and out of the rock like it was a sacred ritual. He said it was the most beautiful setting he had ever seen — and the pizza was absolutely fabulous. Hearing him describe it, I thought: This is exactly the kind of story and tradition you bring to life better than anyone. Gino, would you consider doing a video series where you visit some of these old‑world pizzerias — the ones built into volcanic stone, mountain walls, or natural grottos around Naples, Pozzuoli, Campi Flegrei, and the Amalfi hills? It would be incredible to see you explore: the volcanic‑rock ovens the cave‑style kitchens the families who’ve kept these traditions alive the dough, the fire, the history, the passion You have the personality and the heart to make people feel what my uncle felt — that pizza isn’t just food, it’s a piece of Italy’s soul. I think the world would love to see you bring these hidden gems to life. Grazie, Gino — and keep doing what you do. You make Italy proud.
Gino try making a pineappolitana pizza for the audience plz🙏
Salute!
I had a pizza called Diavel in Naples best pizza I ever had. Can you make that?
Why haven't you used a poolish or biga?
They all look good thanks, will give them a try. How much flour was it? Also if you batch cook can you freeze them or is that illegal in Italy. Would be great if you could show how to make Arancini's.
do you know, if it had like ham in it...
