For minesweeper- the numbers on the squares indicate how many bombs that square is touching (so if you have a 3 in the corner edge of the grid, it is surrounded by bombs on all available sides, or if you have an 8 in the middle of the board, it is completely surroundedby bombs. To win, you have to clear all the spots that don't have a bomb. Using flags helps you keep track of where you've determined a bomb is. The easiest starting point after revealing a section on a new board is to look for any 1s only touching 1 open spot- so you know since it says 1 the spot it's touching has to be a bomb.
