On the topic of minutes played etc. I think it’s worth pointing out that PSG made it to the final of the club World Cup last year, so had little to no rest prior to this season (and their players will be heading straight off to the World Cup at the end of this season).. so it makes sense they’d try and allow their players as much rest throughout the season that they could.
The bayern starters all also have a big amount of minutes, its only the psg ones. Bayerns players had to play in the league
