Recipe: 1. Heat water + keep warm. 2. In a pan, heat ghee on low flame. 3. Add atta and roast slowly. - Keep stirring continuously - Roast until deep brown, nutty aroma (12–15 min) 4. Slowly add warm water (careful splatter). 5. Stir until smooth and thick. 6. Add sugar → mix well. 7. Cook until: - thick - glossy - leaves pan edges clean - holds shape 8. Add cardamom + nuts. 9. Let it cool slightly (important for layering). Final texture should be: thick, scoopable, not runny Assembly 1. Baked tart shell (cooled) 2. Almond cream layer (baked + cooled) 3. Spread warm-to-lukewarm atta halwa 4. Smooth top neatly Optional finishing (high visual impact) • Crushed pistachios • Light ghee brush for shine • Micro pinch of flaky salt (enhances flavour) Critical success points (don’t skip) • Halwa must NOT be runny → it will destroy tart • Almond cream must be baked before halwa • Tart must be fully cooled before layering • Atta must be roasted properly (no raw smell)
