But they can still turn your phone off. Apple needs to require unlock to turn off the phone.
They usually put it in a faraday bag... and in a month your phone pops up in China...
Great tip but to really bulletproof your iPhones from any potential thief all settings under the “Allow Access When Locked” header should be disabled and then enable the Erase Data at the bottom where the device’s data is completely erased after 10 failed passcode attempts. In iOS26 you also have Stolen Device Protection under the “Privacy & Security” header . . . enable this as well to protect your device. I do this for any of the iPhones I am using. This way I know my in-use devices are protected as well as my data stored inside them.

You don’t have to turn Siri off once you turn off control center on lock screen. Siri will ask you to unlock your phone first if you prompt it to do anything that’s switched off for lock screen.

A better option is to manipulate the Airplane features that it turns off so it doesn’t turn off wifi, mobile data or Bluetooth. If you ever need to use Airplane mode then you’ll need to manually switch these off. Another safety feature is to turn on the Find My feature which, even if the phone is in airplane mode or switched off the gps and Bluetooth still work. Yes it’s an Apple feature.
But you didn’t turn off airplane mode before showing the “after” demonstration.
If you turn off access to control panel, Siri will require you to unlock the phone to turn off airplane mode, so you don't need to disable Siri. I just tried it to see, as I was concerned that Siri wouldn't work in CarPlay mode with a locked phone.

You should also consider using a non-numeric passcode to unlock your iPhone. You should also consider setting up a Screen Time passcode that sets Don't Allow for the Content & Privacy Restrictions of "Passcode & Face ID" and "Accounts". By using a non-numeric passcode, it will be harder for them to unlock your iPhone. Buy blocking "Passcode & Face ID" and "Accounts" with a Screen Time passcode, then even if they do crack your iPhone's passcode, it will be harder for them to change your Apple Account's password (which unfortunately can still be changed using the Support app, but you can block access to the Support app by setting an app limit of 0 minutes Every Day).
13pro, not doing as you said. Turned all switches off and it still will go into airplane mode even when my wife tried it.
