There are so many greens, of course I had to choose the ones that attack me😭
You can do this recipe with any greens, so it'll all be on my site:

Hold on, HOLD ON. I have to tell you something Justine. I am from Guilan province in northern Iran. (Our cuisine has been recorded as heritage by UNESCO btw). There is this OLD recipe called “Gazaneh Vavij”, and it’s basically fried nettles mixed with eggs, salt, pepper and turmeric. It is amazing that you have somehow come up with something similar thousands of miles and centuries away :).

I’m so confused that someone didn’t know how violent stinging nettles are LOL

There is literally a German fairytale about a girl having to pick nettles with her bare hands to turn them into yarn and make clothes out of them to set her cursed brothers free. So since you don’t have 7 brothers that were turned into crows by a bitter witch, might I suggest GLOVES!

As someone who grew up in a place with nettles, WHY on Earth did you not put gloves on at any point?! I am crying for your hands 😭

They grow everywhere where I'm from... It's such a weird idea to me that other people dont have childhood memories of accidentally walking or falling into a bunch of stinging nettles and feeling SOO itchy 😂

Paying for stinging needles from the farmers market is so ridiculous to me. In the UK they are literally everywhere. I like semi urban and can walk less than a minute away and forage some.

Another really good way to use stinging nettles is in compound butter. It also makes a very nice pesto

I can't believe that cooks on youtube really use disposable gloves for silly things like mixing mince, but magically forget about them while handling nettles, why, just why

I am from Uttarakhand, India, and watching your videos feels so emotional and personal to me. The way you tell stories through food reminds me that recipes are not just meals — they are memories, history, survival, and love passed down through generations. In my culture too, we call it sisun, and seeing you speak about it with such honesty touched my heart deeply. So many people overlook foods like these, but you give them dignity and a voice. I’m truly beyond grateful for the way you preserve culture and humanity through food. 🤍

Blanch the nettles for a second to remove the stingers and it wont hurt anymore... Also, find some dock leaves before you buy them again!

The stings of stinging nettle was used to treat joint issues in the past. I have no idea whether this actually works but the stings are supposed to actually be really healthy. I am no doctor though, so please do your own research. But maybe that makes the stings a little less bad 🤗

I am from Finland, the common way to eat is like spinach or also as a tea as it has compounds that help with arthritis, - but GIRL - blansh them! If you just dunk them in boiling water for under 30 seconds and cold water rinse them after, there is nothing that hurts you after! They are amazing in a pie with feta! 😊😊

Living in the Pacific Northwest I’ve always found it wild that people buy these at the market as they are everywhere and they are unbelievably expensive at the market. I dry mine for tea usually and I also plant them within my community garden plot so if people try to steal my plants they get stung and hopefully learn their lesson!
