Recipe for "Noodles" with Peanut Sauce: *This is subject to change because I am still testing it out* Ingredients: -1/2 a head of cabbage (chopped into strips) -1 red bell pepper (sliced) -1/2 yellow onion (sliced) -4 green onions ( chopped separate green from white) -2 boneless skinless chicken breast (cubed into 1 inch pieces) -3 limes -avocado oil -garlic powder -4 cloves garlic (minced) -4 tbs tahini -4 tbs crunchy peanut butter -4 tbs tamari -chili crisp (I used 4 tsp but this depends on your heat tolerance) -sesame seeds -salt and pepper Instructions: put cabbage on a baking sheet and drizzle avocado oil on top and season with garlic powder, salt and pepper. Bake at 400 degrees in the oven until edges start to brown (about 10-15 minutes). Meanwhile, make the peanut sauce by combining peanut butter, minced garlic, tahini, tamari, juice of 2 limes, chili crisp and sesame seeds and whisk together. Heat 2 tbs of avocado oil in a skillet on medium/high, add chicken , season with a bit of salt and garlic powder and cook through. adding the bell pepper, yellow onion and white parts of the green onion and cook until soft. Add the roasted cabbage to the skillet along with the peanut sauce and stir until everything is coated and warmed through. Optional garnish with green onion, sesame seeds and more lime juice.
