Yeah, I know, armchair mechanic, but I HAVE had experience with a vehicle that had a forever spongy pedal. The issue was the valve block and controller for the abs. It was a ford escape. The problem was that some of the inlet valves and some of the outlet valves, but not on the same corners, wouldn't open. Maybe use your scan tool to go through and check that all the individual abs valves are opening. I can't remember exactly what the procedure was called in my scan tool, but it was under one of the abs service options. What would happen is that I could press the pedal and get good pressure, tell the system to open a particular valve, either the inlet or the release valve, and the pedal would go soft, then close it again. I could hear the valve move on some of them, but not others. Every time I tried to bleed the brakes, they would be ok for a little while, then go spongy again.

It sounds like the master cylinder's got a seal issue and pressure's bleeding by the piston ABS module could be at fault too..
Did one of the brake pipes get squished in the crash? It’s had flexies but you didn’t mention the hard pipes.

I had a issue with my Clio 3 rs where there was air trapped in the ABS module The way to fix it was to bleed the brake with a diagnostic tool so you can manually activate the pump and bleed the air out of the system Maybe that will work out for you

Just a thought - brake booster / diaphram / vacuum leak? Can cause the pedal to be stiff immediately and then slowly fall to the floor similar to how you mentioned Will
