We make a sauce in Monterrey (northeast Mexico) with the grilled bone marrow, chiltepin pepper, roasted or confited garlic on the grill, and the north east Mexico poker of herbs , oregano, cumin, thyme, laurel (bay leaves) and salt and pepper you should try, and we go very easy on the butter since the confited garlic already has olive oil in it

Halloumi is best grilled as a whole block, then cut into serving pieces. This way you get the best crust on the outside while the inside stays soft.

My dad lived for the bone marrow in a sirloin steak. They don't even give you that anymore in sirloin. He lived through the depression, so his appreciation of anything "food" was far above what we do today.

Trick: use a touch of popcorn salt on corn on the cob. It so fine it actually sticks nicely versus coarse salt that literally just bounces off 🎉
