in canon they pulled that move because they kept countering each other and needed a way to break through but ended up mirroring each other it was to show how in sync these two were and how neither beat the other a display of years of close friendship that ended in a fight where both were true equals

First one is understandable they fought side by side for years and knew each other so well that they tryed the same move but they could not do it becouse the other one was also doing it
So fun fact, they included it in the fight because Hayden just liked doing it on set before lightsaber scenes and got very good at it. So they incorporated it into his character.
I really like the idea that in the middle of this tense fight, the two just randomly started doing parts of a kata at each other, maybe as a sign that neither really wanted to fight the other, so it was almost a baiting technique
