There is some sort of simplicity and charm about him, so many chef have come yet he shines so bright .
I used to record the Khana Khazana episodes and later on learn to cook it. Even my maid used to watch the shows and cook. I think it was somewhere in 1990.

Great interview!! Today we came to the yellow chillies restaurant at Danville , CA USA, which is owned by Chef Sanjay K, they served spoiled biriyani, we could not even take the smell !!

A very big thing in Indian food is that the food cooked at home is different from what is cooked and served in restaurants.
I remember 1985-86 I was with my dad in sea rock for a biryani festival. I clearly remember ordering some zafrani mutton biryani! We were used to eating biryani at Bandra Itami restaurant on hill road. This was very bland and saffron heavy! My dad commented that it was not good! Next minute we were amazed that the chef showed up and was really upset! It was my first interaction with a five star chef! He was sporting and made us another biryani with more spice and we had a great time and we have great memories !!

I have watched many of his shows and enjoyed them over the years. But what I enjoyed most was when he invited his mother to share the gobhi, gajar, shalgam Punjabi pickle recipe a few years ago. It's my favourite and I continue to make this delicious pickle. And then I met her 8 or 9 years ago at an event. She's a delightful person and I enjoyed speaking with her.

Basically I follow my instinct when trying new dishes. Sorry, got carried away. Returning to the Smita's podcast with Sanjeev Kapoor, one of my favourites... 20 odd years back I purchased a bunch of pokect books 8 of them, I still have them, and made good use of them I am 85 of age... So I basically look out daily for new recipes of Sanjeev, Kunal Ranveer Ajay Sanjyot... And create my own, and tweak the recipes of all these guys. Smita I adore you... Wish this episode never ended... Sanjeev is such a delight. My wish is to bump into you somewhere sometime. Loves for you and Sanjeev.

no disrespect to him, he is a legend in his field in india he doesnt want to eat in USA fair enough as food cooked here is bad by indian or whatever restaurants but his restaurant in Bay Area is mostly bad.. umm lets say not good... 3-4 things are good. he is talking about lallla musa daal, thats just ok... yes better than many.... though still far far away from what you could get in india at most places
